I've not noticed the nose-up or nose-down tendancy. I use mouse so maybe it is something with your stick? or not?
I've noticed a few changes to FM;  don't go full flaps in a turnfight anymore, it burns off all of your E. Hurricanes no longer hang on their noses like a helicopter.

I've noticed a big difference with dead-stick gliding, too. At least in the F4U airspeed decreases SIGNIFICANTLY faster once the engine cuts out than it did before (I was once able to glide  ~5 miles to land on a CV starting ~2000k ASL). There's been times I COULD have made a landing before the patch that I've had to ditch instead.
Ron White says you can't fix stupid. I beg to differ. Stupid will usually sort itself out, it's just a matter of making sure you're not close enough to become collateral damage.

It's surely something that has to do with stick, but I don't think it's mine in particular, I recall hearing some one else having the same issue.

As for FM, Ki 84 is the plane I fly the most, it seemed to me now it bears higher speed in diving, and torque seemed to be more relevant at slow speed.... but these are just sensations.
