If it's just general, non SHTF scenarios, an M-1 carbine has a lot of appeal. Fun to shoot (more so, to me than the M-16/Ar-15 series), fairly cheap, good for general self defense at 100 yards or less with hollowpoints (myths aside, ball also has good penetration in cases where that might be important), if I were a deer hunter it would likely be marginal, but probably acceptable if you don't take a shot you wouldn't take with a bow, historical, did I mention fun to shoot, light, fun to shoot, etc. It's just a blast to shoot. It could fill in the SHTF scenario as well, but...
For some sort of SHTF scenario, the No. 5 MK1 Jungle carbine. Best battle rifle bolt action (fast, light, slick) with 10 rnd magazine. Kick is entirely managable, light weight, micronometer sights out to 800 yards, accurate. Also a blast to shoot
Can take most game in North America, even Grizzlies if you absolutely had to I suppose. Slighlty less potent than 30.06, yet the bullet has an aluminum filler in the nose section that causes a quick tumble upon penetration. Simpler than a semi-auto. Light weight and small size. Ammo would be an issue, though I'm sitting on 2000 rounds of .303 British right now. You could get a sportered Indian 2A for the same effect in 7.62 NATO for more common ammo, etc. Easily reloadable using lead bullets without feed issues.
