It all depends on the pilot...from what I've seen, Spits, LA7's and some PonyD's stick stir a lot...from what you've seen, 190's stick stir. Others might say Nik's stick stir, or maybe 109s...

For me, I loose a lot of fights against the Hurri 2c.  The thing is like impossible to make overshoot because it's so slow and turns like a beast, plus it has 4 hispanos.

REALLY good Hurricane IIC, Spitfire V and Zeke pilots are next to impossible to hit though it seems that the Hurricane IIC doesn't experience as much drag but I could be wrong.

The Ki-84 is a hard fight and until it is confirmed that the F4U actually out turns one, then they will always be the toughest for me since I never drop more than 20 degrees of flaps in case the things are porked.

There is not really a certain plane type which i find specifically tough.  It is the combinations that annoy me.

For instance, you look back and see a Hurricane/A6m and P-51/La7 chasing you down. Can't use energy on one and cant outturn the other

Yup... I agree.
Although for this situation what I tend to do is wait for the pony/lghey to get close, cut throttle to ~50%, Pull up, and roll over em, gun the throttle with WEP and dive, repeat as needed until you get into friendly ackack or they turn away :]
But if you have to do it too much, change it up a bit, roll under 'em, that always catches 'em off gaurd 
Then all you need to do is

I would have to say 109E and 109F. Both are great turners and their lethal in the right hands.
