The new F6F has brought this issue to the fore, IMHO.

We all want our cockpits to be an attractive representation of the real thing. But, this must be balanced with the understanding that most AHer's "window" into the virtual world they are flying in is a screen a foot and half to two feet in diameter, and that they are mostly looking around with some pre-set snap views operated by keyboard and button.

Speak for yourself. Many of us have invested in systems which take full advantage of the immersion the 3d cockpit provides. Anything from home made trackir sets to full blown vr headsets.

I kind of enjoy the disadvantages some aircraft's cockpits have, it makes it so there is more depth to the game.  If everyone could see everything in every plane, there would be no sneaking up on bombers, IL2's, F4U's, etc. etc.  Plus, the cross members on the cockpits of the German aircraft were actually a disadvantage to the pilots IRL.  Even if you can move your head around, you lose your gun sight when you do, try getting a snap shot on an passing aircraft at a distance as it fly's by your crossmember by shifting your view to the left/right, in real life I'm sure it's just as hard!

you can move your head around in the real F6F cockpit and see far better than we can in game.
THAT is my biggest peeve--(I suppose this can be overcome by trackIR?) P47D11 was 'modernized' a year or so ago, now whole fargin bomber formations poof behind the canopy struts, which wouldn't happen in RL, as moving one's head a few inches left or right would overcome it. Used to be my favorite plane, now is pointless to take off in

No, the problem is the fact aces highs default zoom is set further than you would be sitting in the cockpit.
Try zooming in a bit, it will help and everything should be fine afterwards.

Not like it hasnt been stated a hundred times before.
