So can I smoke Crappie ? I mite build a smoker if I can . Well have to find a youtube clip of how one even works tho .

  You can smoke pretty much any meat! I bet crappies would be great. As for building a smoker,it's pretty easy also,you can make a nice smoker out of a couple of steel barrels and a bit of stove pipe.  If you're handy with a welder is should be just an afternoon project.

I do have a welder but no barrel . I was thinking of making it out of wood . I need to try some first to see if I will like it I guess .

You don't need to build a smoker just to try it out.  Now that I've gotten more into it I might build one, but so far I've been doing it on a grill.  Do you have a grill, preferably gas powered?

Yes . I got a gas grill .I hooked it up to my home tank .

Get yourself a bag of smoker chips.  I get mine at Menards, they are right by the grills and go for about $1.50 a bag.  I only go through about a half a bag at a time.  Use tinfoil or an old pie tin to hold the chips and put them on the bottom part of the grill.  Use a handheld torch to get them lit and let them burn for a minuted then put them out so they just smolder.  It can be labor intensive as you usually need to add chips or get them burning again every 20 to 30 minutes.  Small stuff like fish cooks too fast so I just smoke them for the first 2 hours, then kick the grill on and get the temp up to about 225 to cook them through.  I brine my fish overnight but I think that would be way too long for just fillets so if you decide to use a brine maybe just let them soak for a couple hours.

Went about 35 miles out of Galveston in July.... Plan was 60 to 80 but seas got too heavy.


Limit on Shark. One on left is 115lb for comparison.

Reds are great eating. When they get larger.. 36" or so they tend to get wormy.

We went out again yesterday and did pretty good!  Nice looking sharks shuffler!

Just got back from one of the best trips I've ever done.

BOAT                                                    Anglers:    

Type and Number of Fish Caught:
First String (Return 2 day 9/19)    32                       142 Bluefin Tuna, 91 Yellowtail, 10 Dorado, 27 Yellowfin Tuna

The fishing was incredible, the boat and crew were great and the group of 32 anglers cooperated with each other to make a good 7 hour drift on bluefin very memorable and fun. This drift was different in one significant way compared to many other bluefin plunker bites I've been part of. These were all quality size fish, not one of them would go for less than 30lbs and most were between 40-55lb's with a few pushing above 60lbs. Helluva a great time was had by the bachelor party group on the boat too. Fish after fish kept coming over the rail in the 40+ range to our amazement, the school stayed with our drift all day til almost dusk...rarely fading below 3 to 4 anglers hooked up.

If you get the chance to go out of SD, this is a boat/crew I'd recommend without hesitation.
