The animation in game looks pretty close to reality in my experience.  Here's a video showing the doors opening.
knowing your part of the collins foundation. you may have heard of the B25j Devil Dog. Her doors open within a second. if i had a vid id show you. ive also seen multiple other aircraft (names  have escaped me for the moment) whose doors open with a lot more speed.

Colmbo do you still fly for the collins foundation? I'm flying up to see the B17 and B24 at gillespie county on April 9th.

Sadly no.

The B25 uses hydraulic rams to open the doors.  The B-17 has an electric motor (the same type motor as used on the landing gear) driving a system of shafts to open the doors.

If you want to go down this path on bomber doors. Then the B29 needs to show the doors opening in an instant insted of the slow cranking open we have now.

IMHO this is not much of an issue to worry about or needs to be changed.

how about the ability to jam bombay doors or even shoot them off? if say a 20-30mm shell goes right into the bombbay doors, it should do some damage to the doors directly instead of affecting the bombers body as a whole.

Shouldn't you be opening your bomb bay doors early anyway?  I open them as soon as I hit the DAR ring of the target I am bombing, hoping that my speed will normalize before I calibrate for a more accurate drop.

Maybe this is a waste.  I don't bomb that much, so I am prepared to be told that I don't have a clue what I am talking about.

We usually open at least a sector before target, often more.

It depends on bombing conditions.  If I have plenty of time to plan then yes the door get opened way in advance so my speed has time to stabilize.

If I have to do a last minute course correction, or get attacked while calibrating and am rushed.. then sometimes I only get one or two calibration attempts in before crunch time.  If my calibration is a few MPH faster than my actual speed, I can close my bomb doors to gain a few MPH and then right as I'm ready to drop I open them, drop the bombs, and close them again real quick.

Yes in a way this may be 'gaming the game' but it does come in handy during times when calibration may be less then perfect and there is no time to get it right.

That to me is good practice.  I find you get a very good calibration when doing that.  I might drop a notch of flap too, just to keep it around 185.  That's in a B-17, don't know too much about any other bombers.

Actually you can hear the doors operate...or at least you can when wearing a noise canceling headset.

Did B-17 pilots wear such headsets during the war?
